You must be patient with him.

He sounds like he means alot to you, so be patient with him. Let him ask questions, and provide answers as best as you can.

I can imagine it being a bit of a shock to him but

slowly he will come around.

No, that one isn't. Smile I'm just saying, you could frighten him with your enthusiasm or you can just be his friend. And if he's such a committed atheist you can always point out that the no pork thing is about practising faith, and not about your thoughts on pork. That's a more interesting discussion.
