I yesterday got the much awaited for update to the phone software to Android 4.1.
Its just minor refinements, but now also includes "Google Now".
I havent turned that on, as its creepy for your phone to know that you are going work befoer you do... but you can still use voice with the google search box and its really good.
Without turning on Google Now, I dont know a way to get the weather to be set to celcius instead of centrigrade, but its still good. It can answer some queries in voice, for others it will bring up google search results if needed or even carry out actions.
"Is it going to rain tomorrow?" (spoken reply) "yes, the forcast for tomorrow in ... is 45 degrees with rain"
"Set alarm for 9am"
"Send message to ..."
"When will the world end?" (spoken reply) "December 21, 2012" with a "... according to these webpages" written after it.
the predicting of the voice is shockingly good too. Way better than you would expect. Like every word (though it struggled with my pronunciation of the word "earth").
Another new feature is that you can turn on a "swype" like system for the default keyboard (though if you are in a quiet place where others wont stare, consider voice typing...) and its quite handy and surprisingly error free unlike my normal typing.
All in all, I am pleased.

Its probably a bit like Siri on iphone - try it once or twice, then ignore it.
Google Now could be useful but I am not sure I want to turn it on, it could be like skynet...
and I doubt many will use the voice features infront of others, unless demoing them.
IMO its less awkward when it picks up natural language accurately, but not there yet with the comfort thingy.

my phone has swipe and talking writing text thingy. its pretty cool..ive forgotten though how to put swipe on. its nice when you want to text with one hand.
Is it true? Is it kind? Is it necessary?
If you have a separate app called swype, then you need the keyboard to the swype one from the settings.
If its built in, then... erm... keyboard settings. probably the same area.

Updated my galaxy tab2 to jb 4.1
if it has had an update recently (past 2.3 months I think) then you can hold down the home button and see if something pops up.
Other than that in the google search box there is a mic. click that and speak.
To find out what version, from the top slide down, click settings, then go all the way to the bottom, click about, then look at software information. Should bt android version 4.1 .(something) instead of 4.0.(something).
Not sure if this was there before, but from settings you can go to personalise and change the lock screen. Just changed to the weather one and its quite spiffy. Might have been there before, but I am not a big customiser (leaving most things default) so I only just came across it now.

It just adds an extra 5% for me... and the weather lock screen is great to show off to others. I think it was there from the start.
