Tropical Mango Mousse

Servings: 6

INGREDIENTS:

2 mangos - peeled, seeded, and cubed

1 banana

2/3 cup nonfat plain yogurt

2 teaspoons honey

6 cubes ice

1 teaspoon vanilla extract

METHOD:

In a blender, combine mangoes, bananas, yogurt, honey, ice cubes, and vanilla extract until smooth. Refrigerate for 3 hours. Pour into individual dishes and serve.

For a traditional Pakistani/Indian dish, simmer tender morsels of chicken in a creamy, spicy blend of onion, garlic, ginger, turmeric, cumin, tomatoes, yogurt, mint, cardamom and cinnamon. Finish by steaming with fragrant saffron rice and potatoes.

INGREDIENTS:

4 tablespoons vegetable oil

4 small potatoes, peeled and halved

2 large onions, finely chopped

2 cloves garlic, minced

1 tablespoon minced fresh ginger root

1/2 teaspoon chili powder

1/2 teaspoon ground black pepper

1/2 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon salt

2 medium tomatoes, peeled and chopped

2 tablespoons plain yogurt

2 tablespoons chopped fresh mint leaves

Super simple Banana Pancake Recipe

I got told about this super simple banana pancake recipe at work.

It has only two ingredients - banana and  egg.

You take a banana, peel it, crush the fruit, add egg  (eggs per banana) and whisk before putting it into the pan.

Super simple.

I made it even simpler - instead of crushing the banana and whisking the egg in, why not stick it in a blender?

I did that, made the pancake and then remembered something really really important.

kind of a deal break important really: I am not a fan of pancakes.

2 pounds ground lamb

1 cup raisins

5 ounces goat cheese

1/3 cup mayonnaise

1 red onion, finely chopped

2 cloves garlic, finely chopped

2 tablespoons chopped fresh cilantro

3/4 tablespoon ground cayenne pepper

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

Salt

Ground pepper

METHOD:

1. Preheat an outdoor grill for high heat and lightly oil the grate.

One Food Bank Opening In UK Every Four Days

Food banks were almost unheard of just a few years ago - now they are being opened in the UK at the rate of one every four days.

For Kenny and Leanne Jones, spiralling debts caused by rising utility bills and high rents led them to the St Andrew's Community Centre in north Liverpool.

The goods they will take home from the food bank there to their four children will mean, for a few days at least, there will be meals on the table.

Families encouraged to eat healthily on the cheap

An effort to convince families in England that they can eat healthily on a budget is being launched.

Four million recipe leaflets will be mailed to families already signed up to the government's Change 4 Life public health campaign.

Three supermarket chains have also agreed to offer discounts on products such as fruit, vegetables and fish.

Why not try a recipe of savoury bananas in a spiced coconut sauce for your Iftari?

Ingredients

5 green (under ripe) bananas
2-3 tbsp vegetable oil
1 onion, finely sliced
1 tbsp curry paste
400 ml coconut milk
3 tbsp chopped coriander

Method

1. Slice the bananas into slices 2.5cm thick.

2. Heat the oil in a deep frying pan and fry the banana slices in batches, until lightly browned on each side. Drain on kitchen paper.

3. Add the onion to the pan and cook for 10 minutes, stirring occasionally, until soft.
